Michelle’s Cookbook- Cashew Energy Balls

With this year being my big 3-0, I’ve made it my personal goal to be in my best body inside and out.  Looking back over the years, I’ve studied and learned many ways to be healthier and to try to eat only foods that nourish my body. I’ve also learned to take care of my soul and to only allow friends and family into my life who allow me to be myself and who also allow me to be my best.

Although it is a constant battle and learning curve, I feel I’m well on my way to this personal goal this year. To be my healthiest, inside and out!

For Valentines day this year I created a healthy yet delicious treat for both my boyfriend and lovely best friend.  I wanted to give them a satisfying and filling treat rather then the original store bought sugar filled chocolates.  This recipe is both a treat and also a good snack to have around for a quick protein boost.

2 & 1/2 Cups Almond FlourIMG_7341

1/2 cup Cashew Butter

1/2 cup Maple Syrup

1 Tbsp Chia Seeds

1Tbsp Hemp Seeds

1/2 cup chocolate chips (%71 cocoa)

Mix all ingredients together and roll into balls and enjoy!
